Fish Pie Using Frozen Fish

Frozen fish is perfectly adequate and I usually use half fresh salmon. I make fish pies all the time with frozen fish I wrap mine in foil with butter and parsely first then when cooked I add peas and sweetcorn and parsely sauce then add mash on top and leave just to cook the frozen veg and brown the top off.

Fish pie using frozen fish. As for the best fish to use in your pie I find the mixture of salmon and any white fish pollock cod haddock simply the best. When I do fish pie I generally cook the fish first esp if its frozen then drain any excess liquid off through a sieve keeping it to oneside for a stock instead of using water for the reciepe or keep the liquid in and add a couple of tablespoons of packet potatoe the dried stuff similar to smash but flakes to bulk the pie out stirring the fish well no-one knows and it thickens the main part up nicely. Using fish that isnt properly defrosted can lead to a watery fish pie. To make the fish pie poach the fish in the milk with the bay leaf.

When the fish is cooked remove the fish and flake into large chunks. It is best to use fresh seasonal fish whenever possible but frozen is fine as long as you defrost it first to avoid water in the bottom of the casserole dish.
